Bringing Cannabis to the Holiday Table
This season, our Infusion Class, led by Seth, the chemist behind all of the success at Off hours, focused on how to make a delicious, responsibly infused stuffing, perfect for sharing (safely!) at your next gathering. Infused cooking is more than just mixing cannabis into food, it’s about learning dosage, balance, and communication. It’s important to know what’s in your infused dish, how strong it is, and how to make sure everyone at the table knows, too.
A Note on Safety and Sharing
Before we jump into the recipe, a few key reminders:

Always label infused dishes clearly. Let your guests know what’s infused and what isn’t.

Go low and slow. Start with small servings — effects can take 30–90 minutes to appear.

Keep infused and non-infused foods separate.

Be transparent. Communicate dosage and ingredients — cannabis cooking is about connection, not surprise.

Infused Stuffing Recipe
This recipe comes straight from our Cannabis Corner Infusion Class and showcases a savory, herb-forward stuffing with just the right amount of elevation.
Ingredients

~1 lb Dense Bread, cut into 1-inch cubes (pumpernickel or marble rye preferred)

4 oz Ghee / Clarified Butter
-
1 Egg Yolk (Room Temp)
-
1 cup Heavy Cream (Room Temp)
-
X g Cannabis Rosin (see equation below to calculate your preferred dose)
-
2 oz (½ stick) Salted Butter
-
1 Medium Sweet Onion, chopped
-
2 Stalks Celery, chopped (white part removed)
-
8 oz Roasted Chestnuts, diced
-
3 Tbsp Fresh Parsley, finely chopped
-
2 Tbsp Fresh Sage, finely chopped
-
1 Tbsp Fresh Thyme, finely chopped
-
2 tsp Fresh Rosemary, finely chopped
-
2 Cups Chicken Stock
-
Salt and Pepper to Taste
Pre-Prep
Dry bread is the foundation of good stuffing — it allows all those rich liquids and herbs to soak in perfectly.
Option 1 (Air-Dry):
-
3–5 days before cooking, cube bread into pieces under 1 inch.

Fill a casserole dish and cover with plastic wrap.
-
Poke a few holes in the wrap and let sit at room temp, stirring once a day.
Option 2 (Oven-Dry):
-
Set oven to 250°F.
-
Spread cubed bread in a single layer on a parchment-lined sheet.
-
Crack the oven door and bake for about 30 minutes, until dry but not crumbly.
Infusion
This is where the magic happens. Use quality rosin from Cannabis Corner to make your infused ghee.

Fill a glass jar (at least 8 fl oz) with 4 oz melted ghee.

Add your measured cannabis rosin, whisk until fully incorporated.

Cover with plastic wrap and poke small holes in the top.

Place the jar in a small pot, then fill with water until the ghee is just covered (but not floating).

Bring to a low boil and infuse for 30 minutes to 2 hours.

Keep warm on low heat until ready to use.
(Tip: Stir occasionally and never let the ghee scorch — slow and steady wins here.)
Stuffing

Preheat oven to 350°F.
-
Remove infused ghee from the pot and let it cool slightly.

In a saucepan, melt the half stick of butter over medium heat.
-
Add onion and celery, sauté for about 2 minutes until translucent.
-
Add chestnuts and herbs; cook until fragrant (about 5 minutes).
-
Pour mixture over the bread cubes and mix gently.
-
Whisk egg yolk into the cooled infused ghee, then add half the heavy cream.
-
Seal and shake gently to combine. Pour evenly over the stuffing.
-
Rinse jar with remaining cream and add that as well.
-
Add 2 cups chicken stock evenly over the top — do not stir.
-
Cover with foil and bake 30 minutes.
-
Reduce heat to 325°F, remove foil, and bake another 15 minutes until golden.
Calculating Your Dose
Here’s the simple formula we teach in our class to calculate your infusion strength:
THC per Serving (mg) = (Total mg THC in Rosin ÷ Total Servings)
Always know your starting potency before cooking. If your rosin is 70% THC and you use 0.5g:

0.5g x 1000mg x 0.70 = 350mg THC total.
If your dish serves 10 people, that’s 35mg per serving — which is quite strong! Adjust down as needed.

Serving & Enjoying
